The evening begins with a selection of small bites that set a vibrant tone. The arugula pani puri offers a fresh, peppery twist on the traditional street snack—crisp shells filled with a bright, tangy liquid that bursts in your mouth in a delicious moment. Accompanying this is the missi roti with green chili butter, which arrives warm and comforting, simple yet extremely satisfying. Next is the modernist chaat tart, an inventive and refined take on India’s beloved street food, skillfully balancing sweet, sour, and spicy flavors in one delicate bite.
The meal progresses to more composed starters. The prawn and asparagus salad, featuring zeera aloo espuma and tomato rasam, is beautifully balanced—sweet prawns, fresh asparagus, and a light cumin-spiced potato foam that adds warmth without heaviness. The rasam enhances the dish with its bright, spiced acidity, perfectly tying everything together.
Before the main courses, a white chocolate and black lime bon bon is served as a palate cleanser. Slightly sweet, slightly sharp, and entirely unexpected, it refreshes the palate and prepares you for the core of the meal.
The main course features a trio of deeply comforting dishes. The lobster haq saag with turnip curry is rich and earthy, with the sweetness of the lobster beautifully complementing the savory greens. The duck rogan josh with chili curry is darker and more intense, brimming with spice and slow-cooked depth. However, the highlight is the lamb yakhni finished with mint dust—delicate, aromatic, and incredibly comforting, with a touch of freshness from the mint that elevates the entire dish. Each dish is served with onion chili lavasa roti, which becomes essential for savoring every drop of sauce.
Dessert continues the creative theme. A pandan payesh with sour milk ice cream, vanilla yogurt, and milk crisp is creamy, fragrant, and layered with texture, while the final delight—paan cotton candy—is pure theatricality. Light, nostalgic, and slightly whimsical in the best way, it concludes the meal on a playful high note.
